One of the most delightful things about Mother’s Day was the sweet breakfasts or brunches my children made for me. I could hear their laughter and discussion as they rattled pots and pans to bring up to me their morning offering. They would all work together to create their masterpiece – I loved it! I miss it! Slowly over the years, my children grew and moved away. My youngest daughter valiantly tried to keep up the tradition…I’ll treasure those memories. Here’s a recipe that children can easily make, with some supervision for Mother’s Day.

Simply Sweet Mother’s Day Brunch Children Can Easily Make

The children can help put together this wonderful, delicious breakfast treat – while the supervising parent or grandparent can oversee the cooking. I remember my children standing on step stools covered in flour and sugar. The counters would be all a mess with egg shells and spilled milk, but that was part of the sweet fun – they did it all, mostly, themselves!

French Toast is a sweet breakfast treat – this French Toast is a bit of a twist on the original. What your children will use are mini Croissants. The French toast can either be prepared on their own or added to a skewer with fresh fruit as a kebab! Isn’t that fun!

The other dish is so very easy – Blueberry Granola Yogurt Parfait. If you have small juice jars – they work beautifully. You can use any small, clear glass jar – even a Mason jar. Remember to take care with glass objects with young children.

Since there is some cooking and cutting involved, I do recommend an adult or much older child supervising or doing the actual cooking – always, always proceed in the kitchen with young children with caution!

The Croissant French Toast Kebabs!

Mini Croissant French Toast

These sweet, buttery little rolls make for delicious, perfect French Toast. The key here is to allow the bread to dry so that when added to the custard the result is creamy not soggy.

Ingredients

  • 16 small croissants 4 per person/2 per skewer
  • 12 strawberries 3 per skewer + garnish
  • 1 tsp strawberry jam per croissant (up to 16)
  • 4 eggs
  • 1 cup heavy whipping cream
  • 1 tbsp cinnamon
  • 2 tbsp honey
  • butter to grease pan/griddle
  • 1/2 cup heavy whipping cream
  • syrup

Instructions

  1. The night before - set out the croissants or bread (substitutes could be: brioche or potato bread) to dry enough to absorb the custard without getting soaked.

    Prepare the tray with pretty dishes, silverware, napkin and a vase with flower.

    Parent  and/or with children helping measure - make coffee or tea.

    Pour the juice.

    Pour syrup into small pitcher or small bowl

    Add the parfait - separate recipe

    Prepare the ingredients:

    Clean, remove tops and slice the strawberries in half.

    In a bowl with a whisk - beat the heavy cream add a tsp of sugar to sweeten.

    Only remove the top of one strawberry per skewer to finish the kebab.

    Set aside the strawberries and cream until the French toast is cooked.

    In a medium bowl, combine the eggs, heavy cream, cinnamon, and honey. Whip until fully combined. Set aside.

    Slice (using butterknife)  the croissants slightly and fill with jelly or jam (this is a task the children can do)

    Heat the griddle; when hot enough brush on melted butter where the battered croissants will be placed. 

    Batter the croissants one at a time on both sides. You can allow them to sit for a few seconds to absorb the custard. 

    Place the bread in the hot skillet (parental task or supervision required) cook about 3 minutes or more until each side is slightly browned. When you flip the croissant, press with the spatula gently - especially the rounded side of the croissant so that the whole will cook through.

    Set aside on a plate.

    Cut each croissant French toast in half.

    Prepare the skewers (remember to take care with these - they have sharp ends)

    Begin with one of the half of the strawberries with the uncut side facing out. Add one of the cut pieces of croissant French toast; add the other half of the strawberry facing the french toast. Repeat one more time. Finish with whole strawberry with smallest part pointing outward from the French toast.

    Repeat with all skewers - 2 per adult; 1 per child

    Plate the skewers adding a strawberry sliced for garnish with the whipped cream.

When cooking with children remember - Safety First. Any time you cook over a stovetop or even with an electric griddle - parental supervision is required.

The Yogurt Parfait –

This is a very easy breakfast dish that a child can easily create – and make it pretty!

Blueberry Granola Yogurt Parfait

Greek yogurt is a wonderful, creamy yogurt. You can select plain or vanilla yogurt - whichever the Mom (or Dad) prefers. If you don't have granola, you can get granola bars and crunch them by hand. Any favorite fruit can be substituted

Ingredients

  • 3-4 tbsp Greek Yogurt per parfait or spoonfulls
  • fresh blueberries rinsed in water; drain
  • granola
  • honey

Instructions

  1. In a small clear glass begin to layer the parfait with a spoonful or two of the yogurt. Top with a layer of cleaned blueberries. Layer with granola. Repeat and finish with a final layer of yogurt. Drizzle the honey over the top.

This is a very child-friendly dish. If you're working with a glass parfait dish - please supervise where the dish is on the counter.

This is a fun, wonderful breakfast dish that would be perfect also as a brunch dish or for a lovely tea with friends.
